Corn Bread

Adapted from rebar modernfood cookbook

Ingredients:

  • 1 cup cornmeal
  • 1/2 cup unbleached flour
  • 1/2 cup whole wheat flour
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup soymilk mixed with 1 tbsp lemon juice or vinegar
  • 2 tsp ground flax seed mixed with 6 tbsp water, let sit for 5 minutes
  • 5 tbsp safflower oil
  • 1 tsp baking soda

Directions:

  1. Preheat oven to 400 degrees F. Combine all of the dry ingredients in a medium sized bowl. In a smaller bowl, whisk together the remaining ingredients.
  2. Add the wet mix to the dry mix and fold them together until just blended. Pour the batter into a buttered 9″ x 9″ square baking pan and bake for 25 minutes, or until an inserted toothpick comes out clean.
