Oatmeal-Tahini Bars

This is a recipe I adapted from the Coconut-Almond bars in Nov 2008 Runner’s World Magazine.

I added the super foods – raw cacao which is high in magnesium helping to reduce PMS symptoms, is food for the brain and heart and is one of the highest foods in antioxidants, I also added gogi berries with are loaded with trace minerals and contain all 8 essential amino acids. I roll these into little balls, and they make the perfect power snack, great before or after a workout or whenever you need a little pick up. They will keep 2-3 days in the fridge and I haven’t tried freezing them

In a large bowl combine:two cups rolled oats (not quick oats) one cup unsweetened coconut, and 1/2 cup each chopped dates or raisins, chopped raw gogi berries, sesame seeds, sunflower seeds, raw pumpkin seeds, raw cacao nibs (available at health food stores).

In a smaller bowl combine: 1 1/2 cups Raw Tahini and 1 cup or less (depends on how sweet you want it) of Raw Honey. If you can’t find raw honey or tahini use conventional products they just have a lot less nutrients. Also add one tsp pure vanilla. Make sure the Tahini and Honey are room temperature or slightly heated so they are easy to combine.
Combine wet and dry ingredients, and with wet hands roll into balls. Store in the fridge.
